Ingredients
- 4 tbsp olive oil
- 1 lime for zest and juice
- 1 lb cod cheeks
- 2 red chili peppers julienned, type dependent on heat tolerance
- 4 garlic cloves finely sliced
- 1" piece of ginger peeled and julienned
- 2 scallions finely sliced
- couple of dashes of fish sauce we used Maine Garum available at Harbor Fish Market
Instructions
- Finely zest and juice half the lime.
- Add the olive oil to a hot pan, stir fry the cod cheeks with the chili pepper, garlic, ginger, and scallions.
- Once the fish is cooked (about 4-5 minutes), remove from the heat and plate.
- Once plated drizzle on the lime juice and sprinkle with lime zest. Eat immediately!
Notes
For this dish, we used Maine Garum, a Maine made umami sauce made from local raised eels! Regular store bought fish sauce will work nicely too!
