Stir Fried Cod Cheeks
Incredibly simple, bright, fragrant, and delicious!

tbsp
olive oil

lime
for zest and juice

cod cheeks
2
red chili peppers
julienned, type dependent on heat tolerance
4
garlic cloves
finely sliced

piece of ginger
peeled and julienned
2
scallions
finely sliced
couple of dashes of fish sauce
we used Maine Garum available at Harbor Fish Market
Instructions
Finely zest and juice half the lime.
Add the olive oil to a hot pan, stir fry the cod cheeks with the chili pepper, garlic, ginger, and scallions.
Once the fish is cooked (about 4-5 minutes), remove from the heat and plate.
Once plated drizzle on the lime juice and sprinkle with lime zest. Eat immediately!
Notes
For this dish, we used Maine Garum, a Maine made umami sauce made from local raised eels! Regular store bought fish sauce will work nicely too!
