Mediterranean Swordfish Kebabs

Servings: 4 servings

Ingredients

  • 1 1/2 lbs swordfish cut into 2 inch chunks
  • 1 lb yellow squash or zucchini cut into skewer sized chunks
  • 1 red pepper cut into skewer sized chunks
  • 1 small red onion cut into skewer sized pieces
  • juice of 1 lemon
  • 2 tbsp olive oil
  • 1/4 cup cilantro chopped
  • 1/2 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp coriander
  • 1/2 tsp cumin
  • 1/2 tsp kosher salt
  • pinch or two of cayenne optional
  • fresh cracked pepper

Tzatziki Sauce

  • 1/2 cup plain Greek yogurt
  • 2 tsp fresh lemon juice
  • 2 tsp red onion finely minced
  • 2 tbsp grated cucumber
  • 2 tbsp fresh cilantro
  • salt and pepper to taste
  • pinch of cayenne optional

Instructions

  • In a bowl, whisk together the lemon juice, olive oil, cilantro, turmeric, paprika, coriander, cumin, cayenne, salt, and pepper. Toss in the swordfish, squash, onions, and peppers to coat. Marinate 30 minutes in the fridge.
  • In a small bowl, combine the ingredients for the Tzatziki. Chill until ready to serve.
  • Heat the grill to high heat. Thread the fish, squash, and tomatoes onto skewers. Grill skewers, 5 minutes per side. Serve with Tzatziki.
