1lbyellow squash or zucchinicut into skewer sized chunks
1red peppercut into skewer sized chunks
1small red onioncut into skewer sized pieces
juice of 1 lemon
2tbspolive oil
1/4cupcilantrochopped
1/2tspturmeric
1tsppaprika
1/2tspcoriander
1/2tspcumin
1/2tspkosher salt
pinch or two of cayenneoptional
fresh cracked pepper
Tzatziki Sauce
1/2cupplain Greek yogurt
2tspfresh lemon juice
2tspred onionfinely minced
2tbspgrated cucumber
2tbspfresh cilantro
salt and pepper to taste
pinch of cayenneoptional
Instructions
In a bowl, whisk together the lemon juice, olive oil, cilantro, turmeric, paprika, coriander, cumin, cayenne, salt, and pepper. Toss in the swordfish, squash, onions, and peppers to coat. Marinate 30 minutes in the fridge.
In a small bowl, combine the ingredients for the Tzatziki. Chill until ready to serve.
Heat the grill to high heat. Thread the fish, squash, and tomatoes onto skewers. Grill skewers, 5 minutes per side. Serve with Tzatziki.
