Maine Crab Roll

Servings 2 crab rolls

Ingredients
  

  • 2 New England-style hotdog rolls
  • softened butter for pan-toasting rolls
  • 8 ounces fresh Maine crabmeat this makes for a fabulously fat roll
  • 1 tablespoon of your favorite mayonnaise
  • 1/2 teaspoon lemon zest
  • 1 tablespoon finely chopped chives
  • 1 tablespoon butter softened
  • lettuce leaves optional
  • Salt and freshly cracked pepper to taste

Instructions
 

  • Combine the crabmeat, chives (leave a tiny bit for garnish), lemon zest, and mayonnaise and stir just until blended. Salt and pepper, to taste.
  • Heat a frying pan or griddle to medium. Butter the sides of each hotdog roll and place each bun side-down and grill until golden brown. Flip and repeat.
  • Place a leaf of lettuce inside each bun. Divy up crabmeat and spoon into each bun and garnish with chives. Serve immediately.
