
Maine Crab Roll
Ingredients
- 2 New England-style hotdog rolls
- softened butter for pan-toasting rolls
- 8 ounces fresh Maine crabmeat this makes for a fabulously fat roll
- 1 tablespoon of your favorite mayonnaise
- 1/2 teaspoon lemon zest
- 1 tablespoon finely chopped chives
- 1 tablespoon butter softened
- lettuce leaves optional
- Salt and freshly cracked pepper to taste
Instructions
- Combine the crabmeat, chives (leave a tiny bit for garnish), lemon zest, and mayonnaise and stir just until blended. Salt and pepper, to taste.
- Heat a frying pan or griddle to medium. Butter the sides of each hotdog roll and place each bun side-down and grill until golden brown. Flip and repeat.
- Place a leaf of lettuce inside each bun. Divy up crabmeat and spoon into each bun and garnish with chives. Serve immediately.
