8ouncesfresh Maine crabmeatthis makes for a fabulously fat roll
1tablespoonof your favorite mayonnaise
1/2teaspoonlemon zest
1tablespoonfinely chopped chives
1tablespoonbuttersoftened
lettuce leavesoptional
Salt and freshly cracked pepperto taste
Instructions
Combine the crabmeat, chives (leave a tiny bit for garnish), lemon zest, and mayonnaise and stir just until blended. Salt and pepper, to taste.
Heat a frying pan or griddle to medium. Butter the sides of each hotdog roll and place each bun side-down and grill until golden brown. Flip and repeat.
Place a leaf of lettuce inside each bun. Divy up crabmeat and spoon into each bun and garnish with chives. Serve immediately.
