Ingredients
- 1/2 pound tomatoes cored and quartered, or halved
- 4 cloves garlic chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp basil thinly sliced
- 2 flounder fillets medium & boneless
Instructions
- Preheat oven to 425°. Toss first 5 ingredients in a large baking dish. Season with salt and pepper. Spread out in an even layer.
- Bake tomato mixture for 5 minutes. Season fish with salt and pepper. Arrange fish in a single layer over tomato mixture. Roast fish with tomato mixture until fish just begins to flake, about 10 minutes.

This recipe was wonderful! I changed it up a bit…I roasted the tomatoes without the basil but added it under the fish along with 1/2 cup of dry white wine. I also did a mix of a couple of tablespoons of melted butter mixed with grated Romano cheese and panko and topped the fish with that. Simply awesome!!! Served with rice. Yum

It was an easy meal to prepare. The recipe just needed a little zing, but to be fair, I don’t use a lot of salt. I served it over fettuccini. I will definitely make it again. Hubby enjoyed it. That’s always a “thumbs up.”
One of my favorites. I added a little onion and peppers that I sautéed and put on fish before baking. So good!

I made this fabulous recipe several times all with fresh ingredients from my garden. I tried it with haddock as well. The flounder works best.
