Cedar Plank Grilled Hake; East Meets West

Equipment

  • cedar plank for grilling

Ingredients

  • 1 lb hake
  • 4 tbsp pure maple syrup
  • 3 tsp grated fresh ginger
  • 1 tbsp plus 1 tsp soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp chili garlic sauce
  • 3 cloves garlic crushed, then minced
  • 1/2 tsp white pepper
  • 1 tbsp sesame oil
  • 1 red pepper cut into small slices
  • 2 scallions sliced
  • olive oil for sautéing
  • 2 cups pre-cooked rice white or brown
  • serve with a wedge of lime
  • cedar plank for grilling

Instructions

  • Soak the cedar plank for 2 hours.
  • Place grated ginger, garlic, soy sauce, cider vinegar, sesame oil, white pepper, and maple syrup into a bowl and mix well.
  • Cut fish in half and put in large ziplock bag with 1/2 of the sauce. Let marinade 30 minutes.
  • Preheat grill. Lower heat to medium. Place the fish on the plank and place on grill. Cook for approximately 15-20 minutes depending on thickness of the fish.
  • Saute the peppers in olive oil until softened, add rice and scallions and blend. Add remaining sauce to pan, blend well, and heat until hot.
  • Plate the rice. Place fish on rice. Enjoy.

Notes

You can use pretty much any other white fish, haddock, halibut, mahi, sword, etc.  Chili Garlic Sauce available at Asian Markets.  Veranda in Portland.
You don't have to grill the hake, you can easily bake it at 375 for ~15-20 minutes depending on thickness.  The cedar plank does give the fish a nice mild smoke.
