
Ingredients
Sushi Rice
- 2 cups sushi rice Follow directions on box
Sushi Rice Seasoning
- 1/4 cup rice vinegar
- 2 tsp sugar
- 1/4 tsp salt
Ginger Marinade Dressing
- 2 tbsp soy sauce
- 2 tsp dark soy
- 2 tbsp toasted sesame oil
- 2 tbsp mirin
- 2 tbsp rice vinegar
- 2 1/2 tsp chilli paste or Sriracha more or less to taste
- 2 tsp grated fresh ginger
Poke Bowl
- 12 oz sushi grade tuna or 1 package 1 lb ready cubed ahi diced 1/4″ dice
- 1 carrot finely julienned
- 1 cucumber thinly sliced, skin on or off, your choice
- 1 avocado sliced
- 6 red radish finely sliced
- 1 cup shelled edamame boiled or steamed per instructions
- 2 scallions finely sliced on the diagonal
- Black sesame seeds or a Furikake seasoning blend
Instructions
- Cook sushi rice according to instructions, rice cooker is best. But stovetop is fine.
- Remove pan from cooker or stove with lid still on and leave undisturbed for 15 minutes.
Sushi Rice Seasoning
- Mix sushi seasoning ingredients until sugar dissolves.
- Remove rice from pan and place in a bowl. Using a fork, gently toss rice. Pour half of the seasoning over rice and gently blend.
- After 1 minute of mixing, drizzle remaining seasoning then gently mix with a fork.
- Leave rice to cool to warm or room temp.
Poke Bowl Assembly
- Mix the ginger marinade ingredients in a bowl.
- Divide rice between 4 bowls. You can arrange it the way you like, or place rice in one half of the bowl leaving room for the tuna.
- Place tuna in a bowl, add 1/2 the ginger marinade and gently mix, then immediately transfer into the rice bowl.
- Top with radish, carrot, edamame, cucumber, and avocado. Drizzle remaining ginger marinade over each bowl.
- Top with sprinkles of black sesame seed or furikake. Enjoy!
