Ingredients
- 3 "Pig Rock" Swordfish Sausages any flavor, available at Harbor Fish Markets
- 3 tbsp olive oil plus a bit for the sausage saute
- 2 small bell peppers use the colors you like, cubed
- 1 small yellow squash cut thickly in half rounds
- 1 small red onion cubed
- 1 tsp garlic powder
- salt and freshly ground pepper
Instructions
- First brown the sausage in a pan, not enough to cook it, just enough to lightly brown and toughen up the skin. Remove from pan and cool off.
- Soak your skewers if they are wood.
- Take prepared vegetables and place in plastic bag big enough to be able to shake the ingredients around. Add the olive oil and mix around. Once coated add the seasonings.
- Start grill and heat to medium temperature.
- Slice the sausages into 4 pieces each. Skewer the veggies and the sausages. Grill for about 4 minutes a side. The sausage will shrink up a bit and veggies will soften. Serve with a nice rice pilaf or couscous.
Notes
You can really choose any veggies you want for this recipe. Â You can also use your favorite seasoning to season the veggies. Â Try some of our very own SoFishticated!!

Great method and flavors! After browning, I made a sauce while husband grilled: a splash of water simmered a bit, half a lemon squeezed, simmered again, then lowered heat and added about 1.5 tbs. butter and parsley, to die for!
I also par-cooked the cut veggies(red pepper and onion)covered with a wet paper towel, 3 minutes in microwave so nothing got charred.
Grilled skewers about 2 minutes on each side.
Great! Butter is definitely better! Par cooking veggies – good idea!
