Lobster Avocado Toast

Servings: 2 servings

Ingredients

  • 2 ripe medium avocados
  • 2 tsp lemon zest
  • salt to taste
  • 1 clove garlic pressed
  • olive oil the best you have, we used Graza
  • fresh ground pepper
  • 1/4 tsp crushed red pepper
  • 2 large slices fresh sourdough cut in half
  • 8 ounces picked lobster meat chopped into small pieces
  • 2 teaspoons finely chopped chives
  • Extra virgin olive oil for drizzling

Instructions

  • Slice your avocados in half lengthwise. Remove the pits and scoop them into a bowl. Mash coarsely or as you like. Add garlic and a dash of olive oil. Add salt and pepper to taste. Mix throughly. Set aside.
  • Put lemon zest in a small bowl, add red pepper flakes, salt, and pepper. Set aside.
  • Heat a skillet over medium heat, coat with olive oil. Salt and pepper the pan. Add your bread slices and toast till golden, flip, add a little more salt and pepper so both sides are seasoned.
  • Spread each piece of toast with a thick layer of avocado mash. Top with lobster, then sprinkle with zest mixture and chives. Drizzle each with a teensy bit of olive oil.

Notes

This will be a little messy, but you won't mind!  Serve with a side of fruit salad!
