Grey Sole layered with Crabmeat Stuffing

Equipment
- 1 small casserole dish
Materials
- 1 lb grey sole about 6 small fillets work nicely
- 1 tsp butter or olive oil for casserole dish bottom
- 2 Harbor Fish crab cakes or make your own stuffing about 3/4 cup
- salt and freshly ground pepper to taste
Panko Topping
- 2 tbsp butter
- 1/4 tsp thyme
- 1 tbsp grated parmesan cheese
- 1/3 cup panko
- 1 clove grated fresh garlic
- 1/2 tsp lemon zest
- salt and freshly ground pepper to taste
Instructions
- Preheat oven to 375. Lightly oil or butter bottom of casserole dish.
- Deconstruct the crab cake, you can add a little panko if you want to stretch it a bit but you should have plenty to layer.
- Salt & pepper fillets. Place two fillets side by side in the dish, add a layer of crab cake, repeat. Just like a lasagne. You will have two fillets on top.
- Melt butter gently in microwave for about 15 seconds. Add all panko topping ingredients and blend well. Cover top of sole with the mixture and bake for 25 minutes. If fillets are thicker it may take a little bit longer. Carefully cut with a serrated knife, dish out, and serve immediately.
Notes
Harbor Fish Market also carries a decent baked stuffed clam in our freezer section. Two stuffed clams would be a great substitute for the stuffing.
