
Ingredients
- 1 tsp sugar
- 1 1/2 tsp soy sauce
- 2 tbsp rice vinegar
- 2 tsp mirin
- 2 tbsp vegetable oil
- 1 tsp sesame oil, more or less to taste
- 1 1/2 tsp grated ginger
- 2 tbsp finely chopped shallots
- dash of cayenne, more to taste
- 1 tbsp finely minced chives to garnish
- salmon roe
- 1 doz oysters
Instructions
- Combine sugar, soy sauce, rice vinegar, mirin into a bowl. Stir until sugar is dissolved. Add vegetable and sesame oils. Add ginger and shallots. Blend well.
- Place oysters on a plate of ice. Spoon mixture onto each oyster, about a tsp to each depending upon oyster size. Sprinkle on a small amount of chives. Place a small mound of salmon roe on top of each oyster. Enjoy immediately.
Notes
Do not be afraid to play with this recipe. Â You can vary the seasonings to your preference. Â Some like more sesame, soy or vinegar. Â You can always add more, start with less. Â Taste as you go!
