Ingredients
- ¼ cup soy sauce
- 2 tablespoons mirin
- 1 tablespoon rice vinegar
- 1 tablespoon grated fresh ginger
- 1 teaspoon brown sugar
- 1 tablespoon sesame oil
- 1/4 teaspoon crushed red pepper
- 2 lbs albacore steaks bloodline cut out (if applicable), skin off, cut into 4 portions
- 2 scallions cut into thin rounds, for garnish
Instructions
- Combine the soy sauce, sesame oil, mirin, vinegar, ginger, red pepper, and sugar in a bowl and whisk together well.
- Place the albacore steaks in a baking dish or a ziplock baggie and toss with the marinade. Refrigerate for 30-60 minutes.
- Prepare a hot grill, or heat a heavy cast-iron or nonstick skillet over medium-high heat. Remove the fish from the marinade. See tip on bottom. Cook the steaks for 2 to 4 minutes on each side, depending on how well done you like the fish to be. Serve hot.
Notes
Tip: When the fish comes out of the marinade, pat it dry with paper towels and brush with mayo, this helps it from sticking to the grill and doesn't effect the flavor.
