Pollock over Potatoes with Nuts Over Fish

Servings: 3 servings

Ingredients

  • 1 lb pollock, haddock, or hake
  • 3 medium potatoes peeled and sliced thinly
  • 1 tbsp olive oil
  • 3-4 tbsp pistachio dill-garlic Nuts Over Fish
  • salt & freshly ground pepper to taste

Parsley Butter

  • 2 tbsp chopped parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3 tbsp butter

Instructions

  • Preheat oven to 375. Peel and thinly slice potatoes, keep them in salted bowl of water. This will help starch leak out and keep them white. Put potato slices into saucepan and boil tor 10 minutes or until potato is nearly done. Rinse and drain potatoes in cold water so you can handle them and set aside.
  • Chop parsley, melt butter gently in microwave for about 15 seconds. Add parsley and seasonings to butter and blend well.
  • Lightly coat surface of casserole/baking dish with olive oil. Layer potatoes overlapping slightly. Lightly salt & pepper them and spoon some of the butter mixture on them. Repeat layers until your potatoes are gone, adding the butter mixture and seasoning to each layer.
  • Cut your fish so that it will fit in your baking dish. Fold under the thinner parts to make the fish mostly even in thickness. Brush on a thin coating of olive oil. Spoon the Nuts Over Fish (it's best to stir up the package because the seasoning tends to settle) all over the fish. Gently move the fish to the top of your potatoes. Bake 20-25 minutes depending on the thickness of your fish.
  • Serve immediately. Enjoy!

Notes

This recipe is good for any white fish such as haddock or hake.  If you choose to do halibut or cod it will take a little longer to cook but will be equally delicious!
