Contrary to popular belief, Cinco de Mayo is not the celebration of Mexico’s Independence Day but the celebration of the Mexican Army’s victory over the French Empire at the Battle of Puebla. It’s not really celebrated in Mexico, except in the city of Puebla and Mexico’s capital, Mexico City. But why muddy the waters with the facts? Cinco de Mayo, in the United States, has come to be quite the celebration of Mexican-American culture and along with that, the very American holiday tradition of serving up plenty of food and drink. Fish tacos and a cold Corona with lime is a very good beginning but let’s explore some ‘just as tasty’ options. Seafood is a very healthy protein and can be substituted in a wide variety of recipes.
