Open-faced N. Atlantic Shrimp Salad Sandwich

Ingredients

cooked North Atlantic Shrimp

tbsp
mayonnaise

tbsp
red onion
finely minced
1
tbsp
scallion
green part only, finely minced
1/4
tsp
lemon zest
1/2
tsp
dried dill
freshly ground pepper and salt
to taste
freshly baked crusty rolls
cut in half
Instructions
Peel the whole cooked shrimp. Place meats in a bowl. Add mayonnaise and the rest of the ingredients. Stir well and pile the shrimp mixture on the half rolls.
Notes
We used the whole cooked North Atlantic Shrimp from Greenland and Rosemont's rolls.
