Shrimp Quiche


  • 1 Pastry shell
  • 3 tbsp butter
  • 1 lb cooked North Atlantic shrimp meat
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped scallion
  • 1/2 tsp tarragon
  • 1/4 cup dry white wine
  • 4 eggs
  • 1 1/2 cup heavy cream
  • 1/2 cup Swiss cheese, grated


  • In heavy skillet, melt butter, add green pepper, scallion. Cook until tender. Remove from pan, add more butter to pan, melt. Add seasonings and wine and boil rapidly until most of the liquid has evaporated. Add onion mixture. Spread shrimp over bottom of pastry shell. Lightly beat eggs with wire whisk. Add the cream and blend until smooth. Set the pastry shell on a cookie sheet and carefully pour in the mixture. Sprinkle with grated cheese. Bake at 375 oven until done, about 30 minutes.
