Servings: 2 servings
Ingredients
- Salt and pepper
- 2 tbsp olive oil separated
- 1 lb shrimp peeled and deveined
- 4 large garlic cloves minced
- 2 tbsp ginger minced
- zest from one lime
- 1 tsp lime juice more to taste
- 1 tbsp brown sugar
- 2 tbsp chili garlic paste 1 tbsp if you don't like spicy
- 1/2 tsp sweet paprika completely for color, not taste
- 1 can coconut milk 13.5 oz
- 1 tbsp fish sauce
- 1/4 cup cilantro leaves finely chopped
- jasmine rice for serving
Instructions
- Heat 1 tbsp oil in a non stick pan, add shrimp and saute until pink on both sides, about 3 minutes. They can be slightly underdone. Lightly salt and pepper. Move shrimp to a platter and set aside.
- Turn heat down to medium low and allow skillet to cool slightly.
- Add remaining 1 tbsp oil. Add garlic and ginger. Cook until garlic is fragrant ~ 2 minute.
- Add brown sugar and cook for less than a minute or until thoroughly melted. Stir in chili paste.
- If your coconut milk is separated, add the thick layer of cream in pan first and melt. Stir well and add the rest of the coconut milk.
- Stir in fish sauce, lime zest, lime juice, and paprika, increase heat to medium. Simmer for 4-5 minutes to slightly thicken. Return shrimp to pan just to warm and coat with sauce. Add the cilantro, stir.
- Serve immediately with jasmine rice.

We are happy you enjoyed it!
I made it for my book club, and everyone raved about it. One member brought rice with cashews and mango, and it was an excellent accompaniment, alongside or in it. I made a double recipe, and it took quite a bit longer than stated for the mushrooms to soften, the shrimp to turn color, and the “soup” to warm up.

The recipe does not indicate how much shrimp. I’m guessing one pound?
Early April fools? So sorry! 1 lb peeled and deveined shrimp!
there is no shrimp in the ingredients?!
My bad! 1 lb peeled and deveined shrimp!
Thanks, John. Does the shrimp go back into the dish at some point? Stirred in at the end with the lime juice?

It was delicious! I saw in Instagram and immediately had to run over to Harbor to buy the shrimp. Looking forward to having this on repeat.
