
Ingredients
- ½ cup red onion thinly sliced
- Salt
- 3 tablespoons red wine vinegar
- 1 store bought fresh puff pastry sheet
- 1/2 cup sour cream
- 1/2 cup whipped cream cheese or not, but then you'll have to whip it
- 1 tablespoon Everything Bagel Seasoning available at Trader Joe's
- 3-4 ounces sliced cold smoked salmon
- 1-2 mini seeded cucumbers thinly sliced
- 1 tablespoon Fresh dill minced
- Freshly ground black pepper
- lemon wedges for spritzing, if desired
Instructions
- Preheat oven to temperature as directed on the puff pastry. In a small bowI, toss onion with a pinch of salt, then add vinegar and toss again. Set aside, tossing occasionally, until ready to serve.
- Mix the sour cream, cream cheese, and Everything Bagel seasoning until smooth. Refrigerate until ready to assemble.
- Line a sheet pan with parchment and lay the pastry on top. With a fork, poke the pastry, deeply, all over. This will help it to remain flaky and lie flatter for the toppings.
- Place the sheet pan on the middle rack and bake the pastry until golden and flaky, 17 to 20 minutes. Let cool completely.
- When pastry is cool, spread sour cream/cream cheese mixture over the surface of the pastry. Top with the salmon, cucumber, dill and drained pickled onion. Spritz with lemon and season with freshly ground black pepper. Using a sharp kitchen knife, cut into squares. Use a spatula to serve, the puff pastry can be crumbly!
Notes
Makes enough for 6-8 as appetizer or 4 as a "side" brunch. Or 2 for lunch!
