By the time Easter gets here, you know that spring is just around the corner. Hope and rebirth are what Easter is all about. Ham and Lamb are the two COP (center of plate) items that you hear most about for the dinner celebration, but salmon is making a statement at Easter dinner lately. Baked fresh side of salmon with fresh spring peas and mint make a beautiful statement on the Easter dining table. And at Harbor Fish we have lovely fresh salmon fillets. And we say lovely because the color is so spring-y! We always carry farm raised Maine salmon, salmon from the Faroe Islands and a very nice farm raised Scottish salmon, Wester Ross brand. Whenever available, we will bring in a wild Coho, too.
