Broiled Mackerel


  • 1 1/2 lbs mackerel, filleted
  • 4 tbsp butter
  • 1 1/2 tsp orange juice
  • 1/4 tsp orange zest
  • parsley, chopped
  • salt & pepper to taste


  • Preheat broiler, wash and dry mackerel. Place skin sides down in greased cooking pan. Blend together butter, orange juice and zest. Spread over fish. Place under broiler (3-5 inches from heat) for about 10 minutes basting once or twice. Sprinkle with parsley before serving.
