Bluefish with Tomatoes and Basil
- 2 lbs bluefish fillet
- 1/2 cup white wine
- 1/2 cup chicken broth
- 3 ripe tomatoes, peeled and chopped
- 1/4 cup fresh basil, chopped or 1 tbsp dried
- salt and pepper to taste
- Place fillets in baking dish and add all other ingredients. Bake in 350 oven for 15 minutes. Serve with rice.
