Ingredients
- 1 tsp sugar
- 1 1/2 tsp soy sauce
- 2 tbsp rice vinegar
- 2 tsp mirin
- 2 tbsp vegetable oil
- 1 tsp sesame oil, more or less to taste
- 1 1/2 tsp grated ginger
- 2 tbsp finely chopped shallots
- dash of cayenne, more to taste
- 1 tbsp finely minced chives to garnish
- salmon roe
- 1 doz oysters
Instructions
- Combine sugar, soy sauce, rice vinegar, mirin into a bowl. Stir until sugar is dissolved. Add vegetable and sesame oils. Add ginger and shallots. Blend well.
- Place oysters on a plate of ice. Spoon mixture onto each oyster, about a tsp to each depending upon oyster size. Sprinkle on a small amount of chives. Place a small mound of salmon roe on top of each oyster. Enjoy immediately.
Notes
Do not be afraid to play with this recipe. You can vary the seasonings to your preference. Some like more sesame, soy or vinegar. You can always add more, start with less. Taste as you go!
