Culinary: Baked, broiled, fried, sautéed, poached, and in chowders.

Characteristic: Haddock-Melanogrammus aeglefinus, is king in Maine. It is the preferred fish of many a Mainer and non-Mainer alike.  Haddock is generally smaller then its cousin the cod and is one of the most flexible fish to cook.  In areas other than Maine, it is sold skin-on, only to assure the public that they are getting what they pay for.  If being sold whole, always look for a dark, round spot near the head: it is said that is where God touched the fish.  In Canada and New England,  Haddock is primarily found in the Gulf of Maine and George’s Bank.  Haddock is usually available year-round and is best in the winter months, when the water is very cold.
