product Specifics On Quality: Mild, clean flavor and very tender flakes.

Primarily Sold As: Whole, medium or large, fillet or loins.

Culinary: Baked, broiled, fried, poached and used in chowders.

Characteristic: Cod - Gadus morhua - belongs to the Gadidae family.  It has a distinctive barbel beneath its chin and a broom-shaped tail.  Atlantic cod’s meat is less firm then haddock, when fresh and raw it is translucent, and ranges from a white to a pinkish color; cooked, it is opaque white.  It is generally available year round.  Cod is a very versatile fish to cook.
