Turbot

Specifics On Quality: White, buttery, tender and flaky.

Primarily Sold As:  Whole and fillets

Culinary: Baked, broiled, grilled, poached or pan sautéed.

Characteristic: Turbot - Scophthalmus maximus - Found in the colder waters of the Atlantic, from the Gulf of Maine to the cold waters in Europe.  This fish is prized as a gourmets dream.  It is similar to other flat fish.  They are masters of camouflage, and live on the sea floor.  They go through the same migration process of their eyes as other flat fish do.  They are known by several names depending where you are in the world.  Turbot feed on other fish, eels, squid, shrimp and mollusks.  They are similar to Atlantic Halibut, just a lot smaller and the dark side is darker.
