Cusk


product Specifics On Quality:    Firm white meat, texture similar to a lobster tail, mild sweet taste. 

Primarily Sold As: Whole or fillet

Culinary:  Baked, broiled, fried, grilled, poached and used in chowders.

Characteristic: Cusk - Brosme brosme - is in the same Gadidae family of ground fish as pollock, cod, and haddock. It is found in deep waters, and likes the rocky, hard bottom area in the Gulf of Maine. Cusk meat is very firm and great in a chowder; the fillets still contain the pin bones, which can be removed upon request. Fresh cusk tends to be available during the same periods as other fresh Gulf of Maine ground fish, such as cod and haddock.
