Mackerel

Culinary: Baked, fried or grilled skin on.

Characteristic:  Mackerel - Scomber scombrus - Atlantic Mackerel is one of the more colorful fish, with iridescent blues and greens between dark wavy stripes and with an opalescent-white underside.  They are streamlined, strong swimmers, and move swiftly through the water.  They usually travel in large schools.  Most fish weigh somewhere just under a pound and range up to two pounds.  They contain extremely high amounts of vitamin B¹²; Atlantic Mackerel is also very high in Omega-3, unlike King Mackerel or Spanish Mackerel, the Northern Atlantic Mackerel are very low in mercury and, according to the current EPA guidelines, can be eaten at least twice a week.  Older Maine recipe cookbooks for this fish call for them to be baked with milk, a little salt and pepper and a couple of dashes of butter.
