Eels - Live

Specifics On Quality: Firm texture, somewhat gamey, white flesh.

Primarily Sold As: Live, whole or in chunks.

Culinary: Fried, poached, baked, smoked and in stews.

American Eels - Anguilla rostrata - It has a snake-like body with a pointed head.  They are brownish to dark green on top with a tan to yellowish underside.  The female travels from the rivers to the salt water to spawn.  After spawning, the female usually doesn’t survive.  They can tolerate a wide range of temperatures and in the winter months will cover themselves in mud and lie inactive.
