Pollock

Product Specifics On Quality: Lean, dark meat, nice flakes, mild, sweet flavor.

Primarily Sold As: Whole or fillets

Culinary: Baked, broiled, fried, sautéed or used in chowders or stews.

Characteristic: Pollock - Pollachius virens - Related to cod and haddock and sometimes referred to as Boston Bluefish.  Pollock has a distinct appearance with a pointed nose, a projecting lower jaw, and a forked tail.  Atlantic Pollock is a lean fish, with dark meat; we think of it in terms of the dark meat on the turkey, with haddock and cod being the white meat.  When cooked, it turns a grayish-white.
