Pollock - Pollachius virens - Related to cod and haddock and sometimes referred to as Boston Bluefish. Pollock has a distinct appearance with a pointed nose, a projecting lower jaw, and a forked tail. Atlantic Pollock is a lean fish, with dark meat; we think of it in terms of the dark meat on the turkey, with haddock and cod being the white meat. When cooked, it turns a grayish-white.
