Grow Out Method - Wild caught oyster, wild growing on rocks and harvested with oyster tongs, which helps to produce and cleaner oyster.
Flavor & Appearance - Because they are a wild oyster their coloring can vary.  The meat is plump, silky, mild in salinity, very sweet in flavor with a clean finish.
Availability -  Year round with a minor disruption in March or April when the ice is to thick for a boat to reach the harvest location and when the ice is to thin to drive out on.
