Oyster - On Sets


product Harvest Location - At the head of Buzzards Bay
Grow Out Method - Wild - This oyster grows on a pebbled bottom and take 3 - 4 years to reach market size.  The waters they grow in are shallow which allows the harvesters to walk the shore and handpick the oysters.
Appearance & Flavor - On Sets look like a west coast oyster.  They have large dark green fluted shells.  The oysters are meaty with lots of liquor.  They are a salty oyster with sweeter seaweed finish.
Availability - Dec. - Apr. winter icing can shut down harvesting in Jan. - Feb.
