Oyster - Flying Point

product Harvest Location: Little Moshier Island, Yarmouth, Maine
Grow Out Method: Grown from seed purchased from Maine hatcheries, then placed in nursery bags in Maquoit Bay, Freeport until October. In October the 1 1/2" to 2" oysters are moved to Little Moshier Island and spread over the bottom for the winter. 
Flavor & Appearance: Upon harvest they are purged to remove any sediment.  They sport a somewhat mossy green hard shell, with nice deep fluted cup and are very easy to open.  The flavor officials rate this oyster as being a complex sweet and salty oyster to having a porcini mushroom quality, what they do all agree upon however is the word amazing.
