Oyster - Pemaquid

product Harvest Location - Mid coast Maine where the Damariscotta River meets the cold North Atlantic.  The water in that area is known as pristine and this oyster is considered a benchmark oyster.
Grow Out Method - Grower produces their own seed in a hatchery.  The oysters start out in fine mesh nursery bags, once they reach the optimal size they are spread over the estuary bottom, which causes their shell to become fluted due to tide action.  It takes 3 to 4 years to become market size. They are hand harvested by divers then suspended to purge any grit or sand.
Appearance & Flavor - 3 1/2 to 4 inches in size, hard shells with deep full cups plump meat, briny with a clean crisp flavor.
Availability - Pemaquids are available until the ice forms over the mouth of the river in winter and harvesting begins again as soon as the ice melts in the spring.
