Oyster - Beau Soleil

product Harvest Location - New Brunswick, Canada in Miramichi Bay an estuary of the St. Lawrence at the mouth of the Miramichi River.
Grow Out Method - Cultivated on suspension lines, in ceaseless wave action, these tidal currents cause the oysters to roll and chafe against one another.  This constant motion serves as an all natural manicuring, which keeps the oyster consistent in size, shape and cleanliness.
Appearance & Flavor - Don't let the shell fool you! The size of the meat is more comparable to a larger shelled oyster.  They have a deep cup a refreshingly mild briny flavor with a clean smooth finish.
Availability - They are not available a couple of times during the year.  As winter starts they lower the suspension lines to deeper water, production stops till safe ice forms. The ice is then used as a harvest platform. Then again in the spring when the ice gets soft the harvesting stops again till the ice is gone.
