Harvest Location - Nova Scotia, Canada in the Northumberland Strait between PEI and Nova Scotia.
Grow Out Method - These oysters are wild and are harvested at the shore at low tide. Some of the deeper beds are harvested by long tongs up to 16 feet long.
Flavor & Appearance - Shells are green and take approximately 5 years to mature. They are very easy to open, even for a beginner. Flavor smacks of the North Atlantic brininess with a mellow finish. Meat is rather plump for a Canadian oyster and are a good representation of a wild oyster.
