Smoked Haddock - Finnan Haddie - Traditionally a lightly brined and then smoked haddock fillet.  It’s origin is from northern Europe.  Once here, it was loved and never lost its ground in New England.  Fresh can be hard to come by from time to time. This happens because of fishing regulations or because of the cost of the fresh fish combined with shrinkage when smoked, making the price more then the market will bare. Most smokehouses these days are using fish with a pre-smoked weight of 3/4 to one pound.
